dec17WHEN LIFE HANDS YOU LEMONS, the saying should go, make a twist and a cocktail. When Superstorm Sandy rampaged through Red Hook in October, Fort Defiance proved worthy of its namesake. The iconic bar in Red Hook was swamped, with ocean filling the basement and two feet of the dining room. But now Fort Defiance is back, thanks to staff and neighbors who heaved to and helped clear the debris and resurrect the café.

To celebrate the conclusion of the 12 Sips and 12 Tastes of Brooklyn, the squad repaired to the cozy bar on Van Brunt to reflect on the variety of foods and drinks being created in this varied city. We found the dead simple: seltzer and milk and syrup for an egg cream, hummus made from chickpeas, lemon, tahini and garlic. And we found elaborate creations requiring investments of time, equipment, capital and processes: bean-to-bar chocolate, or North Fork Blend red wine. But there is seemingly no environmental niche where an enterprising Brooklynite can’t enter and make a contribution. A remarkable time, as Brooklyn rediscovers its industrial past and adds new takes on old-fashioned products.

We also found delightful surprises like the Sorel made by Jack From Brooklyn, a liqueur made with Brazilian clove, Indonesian cassia and nutmeg, Nigerian ginger and Moroccan hibiscus. Jack is Jack Summers, who has created the aromatic Sorel in honor of his Barbados grandparents. Jack’s distillery in Red Hook was also heavily damaged in Sandy and he has been working to rebuild with the help of neighbors and the Red Hook Initiative.

For our toast to Brooklyn at Fort Defiance, we ordered two signature cocktails created by owner St. John Frizell, a mixologist known for using small-batch bitters and liquors: the Maurice, a version of the Manhattan that he created for Avery Glasser of Bittermens Spirits (incorporating Bittermens bitters), and the Pundit, made from coffee-infused Scotch, Cocchi Torino vermouth and Amaro dell’Erborista. Both bracing and complex.

Many think of our neighbor island Manhattan when they imagine cocktails, and there is some truth to that in the old glamour of the city across the East River. But Brooklyn today is the creative cocktail: ingredients from around the world, creative mixtures of different spirit and ideas, some simple and some elaborate, blended and crafted to form an exciting brew. To Brooklyn makers of tastes and sips, keep them coming. Cheers!

TODAY’S SIP TAKES TO HEART THE WORDS of the incomparable Ogden Nash: “Candy is dandy, but Liquor is quicker.” Instead of words, words, words, though, let’s cut to the headline: Brooklyn Brews Booze.

Kings County Bourbon (top) is distilled in the 113-year old Paymaster Building of the Brooklyn Navy Yard. Check out Brooklyn Artisan‘s earlier coverage on a tour of the distillery. Kings County, one of the first small-batch distillers in the state, brews its mash with Scottish barley for authenticity, along with American corn. For true Brooklyn cred, the distillery has added corn picked from a small crop grown in the yard of the distillery into their batches. Best served neat—water breaks things!

Widow Jane Kentucky Bourbon Whiskey (above, left) is the most recent offering from Cacao Prieto in Red Hook. Released in October 2012 at a party there, Widow Jane is made with water brought from the limestone mine in upstate New York that provided stone for the Brooklyn Bridge and the Empire State Building.

Industry City No. 2 Vodka (above, center) is produced in Sunset Park, where Industry City Distilling creates its sugar beet vodka. They document their progress in building a larger plant on their nicely designed, fun web site, which has videos, photos of the distillers and details about the distilling process. Wonder what happened to No. 1?

New York Distilling is making gin (above, left) in Williamsburg, including a version named in tribute to Algonquin Round Table denizen Dorothy Parker, who definitely knew gin. They also have a full service bar cum tasting room next to the distillery called The Shanty.

Brueckelen also makes Glorious Gin (above, center) with New York Wheat, keeping it in the family.

 Brooklyn Gin, despite its name (above, right), is actually fabricated in Warwick, New York, which makes it part of that region we like to call Outer Brooklyn. But we take the name as a gin-soaked compliment.

winter-ale-1785dec10TELL WHOEVER SOLD US THE CALENDAR (Pope Gregory XIII) that I demand a refund. It tells me winter is still 11 days away—beginning on the solstice. The truth is, December is full winter, the gloomiest part of year with its dark nights and fitful gray days. If we must break the year up into quarters, let’s admit we’ve been in winter for nearly six weeks. The solstice marks the low point of winter, the turning of the year, the slow return of the sun. No wonder my Highland ancestors lit their bonfires for Hogmanay: dispel the night, bring back the day. (Of course, from what I know of my ancestors, they probably also burned their neighbors’ barns and sheds for spite, but let that pass.)

To light up this darkest time of year, the craft brewers of Brooklyn are offering some nice and hearty ales, stouts and porters. Winter is the time of stouts and porters, dark and filling, not for your hefeweisens and pale lagers or (kill me now) light beers. For my taste, ale’s the thing for winter.

I’d hate for Robert Burns to be only remembered for Auld Lang Syne, the anthem of the new year, as he wrote other fine verse. The one that comes to mind here and speaks to the need for lightening the heart:

To keep our hearts aboon through winter, let’s find some Brooklyn beer. First up, the Brooklyn Brewery “There Will Be Black,” which I got to sample before a warm wood fire on a gray day at Brouwerij Lane on Greenpoint Avenue. The Lane is a lovely place to spend the winter. The 19 taps and several display cases of bottled beer should get you nicely through our shortest afternoons and longest nights.

“There Will Be Black” is a new release in the Brewmaster’s Reserve series which has, according to their publicity, “a core of black bread and dark chocolate, wrapped in a bright coat of orangey, minty hops”. If that doesn’t sound like a winter drink, nothing does. In addition to the “Black”, Brooklyn Brewery is shipping their standard range of seasonal beers in bottles, including Winter Ale and Black Chocolate Stout.

More elusive is the Sixpoint Brewery offering: Diesel. It seems to be rolling out as we go to press, and in just the last 24 hours, it has begun popping up around the city on the new Sixpoint beer finder. We’re heading out after writing this entry to hunt its “robust chocolate and roasted flavors, with thick pine hop flavor and aroma.”

I caught up with Kelly Taylor of KelSo Beer Company at Grand Central Terminal tonight where he was offering tastings of their signature Nut Brown Lager, which is as good as an ale in my book. He suggested the KelSo Winter Lager for cold nights and also said they were brewing a Porter. Check out their Facebook page or Twitter for more information on tastings and tap availability (they don’t have a web site). They will be commandeering a number of taps for a tasting at Bierkraft tomorrow, December 11.

It’s going to be a long winter. Be careful not to sell your warm socks.

dec9HERE IN CONCRETE-LANDSCAPED NEW YORK, we tend to think of wine as a product of elsewhere;  foreign lands with exotic cultures and languages, like California or France. But in the past four years, two wineries have sprung up in Brooklyn alone: Red Hook Winery (established 2008) and Brooklyn Winery (2010), committed to actual production within the borough limits. Another approach is that taken by Brooklyn Oenology, which focuses on regional grapes and produces its wines outside the city. But it has set up a tasting room in Williamsburg to help promote its production.

Wine has a long history of being made in one place and consumed in anotherremember all those ancient amphorae dredged up from the bottom of the Mediterranean? But local production has its merits. It is one of those tropes of the wine culture that to be in the know, one has to taste those wines that “never get shipped outside the little town in [insert name of region here] where they are made,” with the implication that the locals snare the best for themselves, leaving the rest of us to sip the leavings from the barrels. As well, in our increasingly environmentally aware culture, many question whether it is a good idea to be shipping quite so many goods, including wine bottles, thousands of miles, burning fossil fuels and polluting the planet.

When the French use the term terroir to refer to the effect of a geographical region on its agricultural products, they sometimes elevate that to a mythical level. But they are on to something. The number of steps in getting a wine from a little vineyard in Europe to our dinner table can appear daunting. Very different from the winemaker leaning over and drawing off a bottle for you from the barrel.

A good place to begin to sample the local terroir is the Brooklyn Oenology tasting room. They have a nice selection of wines they are making from New York State grapes. They have three reds currently, with two 2006 vintages (unlike the other Brooklyn wineries, which haven’t been around long enough to actually have wines more than a couple of years old).

  • 2006 Merlot: 93% Merlot with 5% Cabernet Sauvignon and 2% Petit Verdot (all grapes from Long Island’s North Fork).
  • 2008 Motley Cru: 40% Petit Verdot, 37% Cabernet Sauvignon,18% Syrah, and 5% Merlot (all North Fork grapes, as well).
  • 2006 Social Club Red: a blend of 62% Merlot, 26% Cabernet Franc, 8% Cabernet Sauvignon, 3% Malbec, 2% Petit Verdot, 1% Syrah. I would categorize this last as outside the terroir as 2/3 of the grapes are from the Finger Lakes region and hence had to cross bridges to get here.

The staff at the tasting room are helpful and friendly, there is a variety of regionally sourced cheeses and charcuterie on the menu, and the facility hosts a number of events including movie nights and a happy hour on weeknights before 7 pm that offers two glasses of wine for the price of one.

We’ve talked about Brooklyn Winery elsewhere, and they have a nice selection of reds, including the 2010 North Fork Blend (81% Merlot and 19% Cabernet Franc), which we’ll be saving for our Christmas table. The winery encourages you to bring your own growler so you can enjoy that “out-of-barrel” experience directly.

The Red Hook winery was badly damaged during Sandy and is currently offering “survival packs” of their wine in an effort to rebuild. Their wines are also available at the Brooklyn Wine Exchange on Court Street.

And some time soon, perhaps some wine connoisseur will lean over his dinner table to whisper of a wine bottle he snagged “that, you know, never even gets across the BQE.”

Postscript: Noticed on an old Brooklyn Historical Society blog post that December 7 th was the anniversary of the repeal of Prohibition. That reminded me that although we now welcome the new winemakers to Brooklyn, we are probably far from the high point of Brooklyn winemaking. Many immigrant families, particularly from Italy, were used to making wines. During Prohibition, thousands of personal winemaking operations went on in the borough, taking advantage of a loophole that allowed manufacture for personal or religious consumption. The grape consumption in the borough must have been truly spectacular through the 1920s and early 1930s.

ON OUR FIRST VISIT TO BROOKLYN WINERY, the Brooklyn Artisan taste/sip squad donned hard hats and clambered around a raw construction site. In the two years since then, the winery has developed into a first class facility with a terrific wine bar integrated with the winemaking facilities. The B-A squaddies stopped by again recently to check out a flight of wines and some charcuterie. We didn’t have time for the winery tour (with 10 tasting/sipping stops that day, food journalism can be brutal, I tell you), but we are definitely going back. Brooklyn Winery takes wine very seriously and with classes and tours, they are committed to educating and informing as well as entertaining.

The main room is outfitted with long wooden farmhouse tables in beer garden style, with the upstairs rooms more lounge-like. Very comfortable settings for various sizes of groups, but we opted for the zinc bar, with its copper wine dispenser and proximity to Lex Kiefhaber, the knowledgeable manager. Lex helped us select our flight—the 2011 Stainless Steel Riesling for a white, the 2011 Rosé of Merlot, and the 2010 North Fork Blend red, all made with New York State grapes and all terrific young wines.

Lex then enthusiastically insisted on our comparing a glass of the 2011 Barrel Aged Riesling toe-to-toe with the same grape fermented in stainless steel. Brooklyn-Winery-ToursThe Barrel Aged, with grapes from the Finger Lakes region, is fermented and aged in old oak barrels which Lex explained allows the tart malic acid to convert to smoother lactic acid (a process logically called malolactic fermentation), providing a richer mouthfeel. The Stainless Steel has a more crisp fruit taste characteristic of a modern Riesling. Two distinctly different variations on a common theme, and either is definitely a pick for a Christmas white.

dec6THE DANISH SEAMEN’S CHURCH (Den Danske Sømandskirke), housed in a lovely brownstone with a ship’s bell in the front yard on Willow Street in Brooklyn Heights, is a religious, social and cultural center for New York’s Danes. Brooklyn Artisan’s culinary team made its way there for the smørrebrød during the church’s Traditional Christmas Fair at the end of November. In the yard behind the church, in an immense pot, we discovered Gløgg, the mulled wine that fuels Danish Christmas. It’s wonderfully warming and tastes great with spiced cookies and æbleskiver, the Danish version of the doughnut hole.

Julie Sløk, the Church’s Sømandspræst (pastor—literally “sailor priest”) has shared the recipe—although I would have thought it a closely guarded state secret. Gløgg, according to Julie, “will take about a week to make—like any good recipe it is simple but needs time. So you have to begin a week before. This is the recipe for 10 to 15 persons depending on how much you like it. Voilà and god jul!

Ingredients
5 sticks cinnamon
2-inch piece of fresh ginger, cut in thin slices
20 whole cloves
25 cardamom pods
2 tsp dried coriander
30 peppercorns
2 cups water

1 1/2 lbs raisins
2 1/2 cups rum
1 bottle port

3 bottles red wine (no need to spend a fortune on it but it should be on the fuller side)
1 lemon
1 orange
1/2 to 1 lb of almond splinters
2 cups of brandy or cognac
Sugar to taste

One week before the party
Create an extract by combining the cinnamon, ginger, cloves, cardamom pods, coriander, peppercorns and water.

Bring to a boil, then let it cool down and sit covered for 4 to 5 days.

Mix the rum and port together in another container, add the raisins and soak for 5 days. (Note: Don’t use aluminum containers for storing these parts.)

Day of the party
Strain the extract through a sieve and put it in a large pot along with the peel of one orange and the peel of one lemon. Simmer for 2 minutes.

Pour in the three bottles of red wine and heat it without boiling.

Add the cognac, the raisins with liquid and the almonds. Add sugar to taste (not too sweet but not too sour). Serve hot with spice cookies.

This weekend’s festival of screenings, speakers and panel discussions covers some of the best and newest in science fiction, science and the supernatural. Watch documentaries on A.I., virtual reality, galactic superwaves. Observe scientist Ronald Mallett Ph.D. who is working on a real-life time travel machine. Through Sunday: Off Broadway post-Sandy Discounts. Playhouses big and small were dark last week and as an enticement to get audiences to return, many are offering $20 tickets. Saturday & Sunday: International Passive House Days. Four Brooklyn residences will be open for tours: two landmarked homes, two new construction. All use construction methods that meet Passive House standards: comfortable temperatures year round, affordable to build, energy savings, renewable. Saturday & Sunday: 21st Annual Quilt Show “Cool Quilts”. This annual exhibit showcases some of the most interesting quilts made in the area. This year’s show takes inspiration from the word cool. Lefferts Historic House, Prospect Park. 12pm-4pm.

Saturday: Brooklyn Navy Yard by Bus: the Past, Present & Future of the Yard. Voted 2012 best tour by New York, this tour packs almost 400 years of city history in a little over two hours. At its peak, the Navy Yard employed tens of thousands of workers, but then stood idle for almost 30 years. In its current resurrection as a haven for artists and entrepreneurs, the Yard is becoming a model for sustainable urban industrial parks. Included in the tour is a closer look at the dry dock that’s been in use since before the Civil War, a hospital frozen in time, and the nation’s first multi-story LEED Gold-certified industrial building.
